What Is Nikkei Cuisine?

Nikkei cuisine is the cooking that grew out of Japanese immigration to Peru. Japanese families began arriving in Peru at the end of the 1800s, and over generations their cooks did what cooks always do: they worked with what was around them. Japanese knife work and respect for raw fish met Peruvian limes, chiles, corn and potatoes.

What makes a dish Nikkei

There is no single recipe. You know it by the combination: fish cut with a sushi chef's precision, then dressed with the bright citrus and aji peppers of the Peruvian coast. Soy and ginger sit next to cilantro and lime. Nothing is heavy, and the fish is always the point.
